At House of Sams, we have always been interested in that moment.

For more than 30 years, our journey has been driven by a simple belief: food should create a feeling before it creates a memory. What began as Uncle Sam’s Kitchen in 1996 has grown into a culinary business built around experimentation, customisation and the belief that no two occasions should taste exactly alike.

That is why we have never looked at catering as simply putting together a buffet.

A dish at Sam’s rarely begins with a question like, “What else can we add to the buffet?”

It begins with a thought.

What if this familiar dish was presented differently? What if a forgotten regional recipe was brought back? What if two culinary traditions met on the same plate? What if a dish became the centre of conversation rather than simply another item on the menu?

That curiosity has shaped our approach to premium catering services in Chennai for decades.

We have always believed that customisation is not about changing a dish because someone asks for it. It is about understanding the occasion well enough to create something that belongs there.

Thirty Years of Asking “What If?”

Our culinary journey has never been confined to what is familiar.

We brought Mexican chefs to Chennai for original margaritas, nachos and burritos as far back as 1999. We have worked with Japanese specialists for sushi and sashimi, Turkish experts for maras dondurma, Wazwan chefs from Jammu and Kashmir, Bohra cuisine specialists from Gujarat, chaat masters from Uttar Pradesh and Kolkata, and traditional chefs from Lucknow.

Why?

Because if we are going to put a cuisine on the plate, we want to understand what makes it special.

That curiosity has taken us towards ingredients such as Peshawar raan, Nuremberg bratwurst and Korean gochujang. It has taken us through Lucknowi biryani and tunday, Amritsari kulcha, Goan vindaloo, Northeastern tenga and Kanpuri gilhori paan.

For us, discovering food is never about adding another cuisine to a list.

It is about finding the character within it.

The Dish Is Sometimes the Concept

Over the years, we have learnt that a memorable food experience does not always require an elaborate setting.

Sometimes, the dish itself can carry the concept.

Our Samma Party offerings are a good example. A menu can arrive as a Ghungroo Biryani Box, a Delhi Belly Box, a Dakshin Box or a Kebab Box, with carefully selected combinations designed around a particular food mood. Even the format becomes part of the experience.

That is the difference between serving food and thinking about food.

The question becomes not only what goes inside the box, but why those dishes belong together, how they are experienced and what makes someone want to open it and discover what is inside.

That same thinking can scale from an informal gathering to a large celebration.

We Like Food That Starts Conversations

We have always enjoyed the unexpected.

A familiar Indian dessert presented in an unfamiliar way. A live preparation that draws guests towards the counter. A regional dish that makes someone ask, “What is this?” A combination of flavours that sounds unlikely until the first bite proves otherwise.

Our gallery itself reflects this spirit, with creations such as chocolate pani puri, rasmalai doughnuts with droppers, kunafa rasgulla nests, motichoor jalebi parfaits, cloud tarts and mango mishti doi.

These are not ideas created simply to make a photograph look interesting.

There is a culinary thought behind them.

Our appetite for new ideas has never stopped at the plate.

We have catered in a paddy field during pouring rain. We have found our way to remote locations before GPS was commonplace. We have transformed food trucks into buffet stations for an interfaith wedding and served food across a moving train during a celebration connected to Chennai’s first metro line.

For us, these are more than entertaining stories.

They reveal how we work.

Creativity Needs a Strong Kitchen Behind It

Ideas may begin with imagination, but they have to survive execution.

Our 10,000 sq ft culinary campus, The Hive, is the operational heart of the business. It brings together central kitchens, trained teams and systems designed to coordinate events from beginning to end. Our proprietary Honeycomb software has also supported bulk outdoor banquet operations for more than a decade.

This matters because creativity at scale requires discipline.

A dish that works beautifully for ten guests must still deliver when an event calls for hundreds or thousands.

A concept may be exciting, but it has to be practical. A presentation may be striking, but it must travel. A menu may be ambitious, but it must be executed consistently.

That is where three decades of experience make a difference.
